• 1/3 cup uncooked white rice
• 8 cabbage leaves (remove the tail end of the cabbage with a paring knife, it makes it easier to roll later on)
• I/4kgs lean ground beef
• 1/4 cup chopped onion
• 1 egg slightly beaten
• 1 teaspoon salt
• 1/4 teaspoon ground black pepper
• 350ml tomato soup (buy from supermarket if you cannot cook you own)

Cooking directions

Step 1: In a medium saucepan, bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.

Step 2: Bring a large, wide saucepan of lightly salted water to a boil. Add cabbage leaves and cook for two to four minutes or until softened then drain.

Step 3: In a medium mixing bowl, combine the ground beef, one cup cooked rice, onion, egg, salt and pepper, along with two tablespoons of tomato soup. Mix thoroughly.

Step 4: Divide the beef mixture evenly among the cabbage leaves. Roll and secure them with toothpicks or string.

Step 5: In a large skillet over medium heat, place the cabbage rolls and pour the remaining tomato soup over the top. Cover and bring to a boil. Reduce heat to low and simmer for about 40 minutes, stirring and basting with the liquid often.

• 1 tablespoon vegetable oil
• 1 cup chopped onion
• 2 cloves garlic, minced
• 1/2 cup chopped carrot
• 1/4 cup chopped celery
• 1 kg tomatoes, skinned and crushed
• 3 1/2 cups vegetable broth/water
• 1 tablespoon tomato paste
• 1 teaspoon salt
• 1/2 teaspoon dried thyme
• 1/2 teaspoon ground black pepper
• 4 drops hot pepper sauce

Cooking directions

Heat oil in a large, heavy sufuria over medium heat.

Sauté onion and garlic until onion is tender.

Add carrot and celery and cook for seven to nine minutes until tender, stirring frequently.

Stir in tomatoes, add the tomato paste and cook for three minutes before adding the broth, salt, thyme, pepper and hot pepper sauce. Reduce heat to low. Cover and simmer for 20 minutes, stirring frequently then remove from fire.
