Breakfast is the most important meal of the day, yet according to a survey by Unilever Kenya on breakfast consumption among Kenyan families, only one in 10 children get more than one food type/drink for breakfast and one in 10 women cannot afford to provide their children with breakfast daily. Lack of a good and nutritious breakfast reduces our children’s immunity – poor health affects their performance at school. Essential nutrients are necessary for healthy growth such as 7 vitamins (A, B1, B2, B6, B12, D3 and E) found in Blue Band, a Unilever spread. In light of this, we bring you a healthy breakfast recipe for your young one. 

Ingredients:

2 slices wholegrain bread

1 egg

2 tablespoons milk

½ cup assorted fresh berries

1 ½ tablespoon of honey

1 pat spread (Blue Band)

Cooking instructions:

First whisk one egg and two tablespoons of milk together and set aside.

Then heat the pan on medium heat till hot and add margarine. When the pan is hot and margarine has melted, dip the bread in egg and milk mixture and set in pan.

Cook for about three minutes or until golden brown on both sides.

Then place second slice of bread on top of that and drizzle with the honey.

Kitchen tips

Some children skip breakfast because they wake up too late to have time for breakfast or because they think it’s a way to stay slim. But skipping breakfast doesn’t help people maintain a healthy weight; in fact, you tend to eat more calories throughout the day as you eat more to keep hunger pangs at bay.

Children who don’t eat breakfast are less able to learn at school, get less iron in their diets, and are more likely to have a higher body mass index (BMI), which is a sign they may be overweight, whereas kids who eat breakfast do better in school, are more likely to participate in physical activities, and tend to eat healthier overall.

Don’t skip breakfast because you’re too rushed. Try these healthy, easy-to-grab breakfast ideas that can be prepared the night before:

A single serving of wholegrain, low-sugar cereal

Yoghurt

Fresh fruit

Wholegrain muffin

A trail mix of nuts, dried fruits, pretzels, crackers and dry cereals

Kitchen safety

Never add water to a pan with hot oil in it as a way to cool it. It could splatter and burn someone. Instead, put the pan at a safe place and allow it to cool off by itself.
