Ingredients:
• 500g minced chicken
• 4 spring onions, finely chopped
• 1/3 cup (20g) finely chopped fresh coriander leaves
• 2 cloves garlic, crushed
• ¾ teaspoon cayenne pepper
• 1 egg white, lightly beaten
• 2 tablespoons oil
• 1 lemon, halved
Cooking method:
First mix all the ingredients together except the oil and lemon.
Then season the mixed ingredients with salt and freshly ground black pepper and shape the mixture into four patties.
Next refrigerate the patties for 20 minutes before cooking.
Afterwards, heat the oil in a large frying pan over medium heat, add the patties and cook for about five minutes on each side, or until browned and cooked through.
Finally squeeze the lemon on the cooked patties and serve with a salad or use to make burgers.
(Yield: Four servings)
Kitchen Tip:
Cayenne pepper, also known as the Guinea spice, cow–horn pepper, red-hot chilli pepper or red pepper (especially in its powdered form), is related to bell peppers, jalapenos, paprika and others. You can simply use any of the above to substitute the cayenne pepper or simply deseed the fresh red pepper, chop and add to your taste.
Kitchen Safety:
Never put fresh pepper in a hot pan or burning fire in your kitchen because it has a serious choking effect, which could even suffocate you or your children. Always apply olive oil on your hands to reduce the burning effect of peppers and then wash with soap after cutting.
